Email enables Sharepoint contacts

OK, so I moved my contacts from Public Folders to a Sharepoint folder with the hopes of using the Activities tab, but that does not show any activities.

Here's the big question. If a user is using Exchange & Sharepoint and only using a public contacts folder, how does the email get associated to that contact and displayed in the activities tab?
