EAN128 Barcode

Hallo everybody,
i have a question linked with EAN128 barcode. So i read a bunch of documentation at Internet about switching between the code sets and i didn't get it?!?! Can somebody explain me how exactly it works? And i have another question what is happening when im using characters for crearing a barcode using code set A, but the characters are not part of this set??

All but a few of the symbol patterns can have one of three different meanings, depending on which subset is currently selected; the symbology supports three different subsets:

Subset A
Upper-case alphabetic characters, digits, punctuation symbols, ASCII control codes.

Subset B
Upper-case alphabetic characters, digits, punctuation symbols, lower-case alphabetic characters.

Subset C
Numeric digit pairs 00 to 99.
