E-mail archival?

I currently have 2 Red Hat servers running sendmail & qpopper that provide e-mail to our domains. Users check their mail via pop3 and delete them from the server after retrieval.

I'm looking for something that will allow me to read e-mail received (and sent hopefully) to/from people on our domain AFTER it has been deleted from the server by their pop3 client (or sent successfully). Is there a peice of software someone can reccommend that will archive e-mail for x number of days after its been sent/received?
