Depending on how the sco bootloader & installer works you can probably do it with lilo too. If its anything like solaris for intel, you are given no choice of where to put the bootloader - it ends up in the MBR of the first drive and will only boot primary partitions (not logical partitions).
If you're going to reinstall it all....
If SCO allows you to put the bootloader in the partition boot record rather than the MBR, I'd do that. Then install redhat where you like and put lilo in the MBR. After that you'd edit /etc/lilo/conf to setup an option that would chain-boot a boot-record in another partition.
Otherwise you probably have to have the linux /boot partition in a primary partition with lilo in the boot record of that partition. Then install/repair sco so that it once again has its boot loader in the MBR.
