What is the best way to configure my machine to dual boot ubuntu server and centos server?
 
I'm sure there are plenty of howto documents out there describing how to dual-boot Linux installations, so there's no point in repeating it here. Is there any particular part you are stuck with?

Normally the installation process of your linux distros will tke care of that.

So, after installing the first distribution, proceed to install the second; it should guide you through configuring necessary entries in grub.

One question though: being both your chosen distributions servers, what is the point of a server that is not always on?

Shouldn't you rather be looking at virtualising one of the two and run them at the same time?
