Dreamweaver-output data to a text file

How do you export/track the information from a survey/evaluation created in Dreamweaver into a text file?

Depends on what programming language you are using to collect the data. If you are on a unix/linux web server there are many cgi/perl scripts that will write the data from a form to a .txt file. BigNoseBird.com is a good site to find out about that, and he even has some scripts for you to d/l for free.

If you are using ASP, I am sure there are some people here that could point you in the right direction. There is also an ASP forum on this site. I am not proficient in ASP.

Another option is PHP and mySQL database, which would require a bit of programming experience on your end. PHP and mySQL are offered as an option with many of the web hosts out there.
