Dreamweaver Form Menu Field - How do you disallow the first selection?

I have a form with several dropdowns. The first item in each dropdown is 'Select' which needs to be disallowed and if left a message should say they must select from the dropdown list. While this was easy in FrontPage, I can't find how to do it in Dreamweaver.

Any help would be greatly appreciated.

To disable the option.
