DR scenario - one server, two sites

I have a NW7.4 server on Win2k3 which is installed on site1 and I have a storage node on site2, Can I manage separate zones (both sites have there own library & storage nodes) from one NW Server?
 
Yes, but there are a few things to remember.

All indexes are done at the server, this means that you will need to set up some sort of handling on the server to deal with index savesets. You will also have to have sufficient bandwidth between your sites for the remote clients to send their index data to the server.
 
If site 1 has a storage node and NWServer, and site2 just has a storage node, can I manage the Site2 storage node from Site1 and have Site2's data stay/be backed-up in Site2?
 
Ok, I can now I can see and backup from/restore to...but, it's only for a day... I mean, I can back up something one day and a day or two later, I can't recover what I backed-up when I use the NW User program it only shows me things I've backed-up that day... I looked at the logs and saw a message that stated the NW Media Database hadn't been backed-up yet...Hmm, what does that mean? Also, how can I create the Save Sets you mentioned?
