Domain Trusts between all DCs?

I have been asked to setup a trust between a companies main AD and their Application AD - the domains are separated by a couple of firewalls.

Although I have all of the required ports, I was wondering whether every DC in both domains had to be able to communicate with each other or whether you can setup something so that only two DCs from each AD do the communication?

If I remember correctly each domain controller in the trusting domain is in communication with a single dc in the trusted domain.
