I just bought an iBook and it's a great piece of hardware and OS. The sleep feature is exactly as it should have always been and just on that feature alone (and Expose) is enough for me to recommend to anyone.
Although I don't really need the hibernation feature, I'm really shocked to find out that it doesn't exist for the iBook. Is it available for the PowerBooks? I haven't found any information on Apple's site, forums, or Googling.
Although a 5 hour battery life (on mine) is plenty of time for a working session, I wonder if the battery life is the reason for not having hibernation.
