I've installed Moss 2007, and was wondering how i tell it to store uploaded files on another drive other then the default install c:\?

If by uploaded files, you mean the files that you add to document libraries, then these are stored in the SQL database, not the file system. If you need to move the SQL data and index files you can do so through the SQL Management Studio.
