Dumb questions here:

Can anyone tell me where on the sharepoint server do uploaded documents physically reside? I'm demo-ing sharepoint, but in order to plan accordingly, I'd like to know where all these documents that I upload to the "shared documents" libarary are being placed.

The documents live in the SQL Server database ..._SITE (where ... is your portal name), in the docs table. You can reach them through the Web client network interface in Explorer if necessary.

P.S. Don't make any alterations to Sharepoint tables and data outside of the portal or service interface. Bad things can happen if you ignore this warning.
 
I have just submitted a FAQ entry for this, as follows:

The uploaded documents are held in the content database as blobs (binary large objects). The name of the document library (e.g. "Share documents") is just a piece of data held along with the blob in the database.

Theoretically it would be possible to look for them in the database, but I would seriously caution against making any changes directly at database level. Let SharePoint do all that for you.
