I have created a document, with 3mm bleeds
I have made a colourful box over the top of my bleeds. Now I can see my document edges!
Does anyone know if / how I can do this? I can do it by dragging guides to the edges, but is this the only way?!

This is the only way that I have done it. You can set up guides on your master page so that you do not have to make them on every page.
 
I'm getting confused a bit...
When working with bleeded jobs, I used to set up my page size as the final finished size, allow bleeded areas go beyond the page. When working, press W can switch between bleeded normal view mode and preview mode to see the final look.
Is this the case you guys are talking about, or page size is better to include bleed?
