Is there an easy way to display a timestamp value as opposed to:

other than stringing it and cutting it up?

I assume you mean a MySQL column of type TIMESTAMP.
I would likely use the MySQL function date_format() in my query so I could transform the format of the data as I fetched it. See (look for "date_format" on the page).
