I have the trial software of it installed and I'm wanting to defrag my drives tonight. Is there anything i should due since I have exchange on this server as well? I don't want to screw up our system. We have one drive for OS and Exchange and one just for data. Let me know!

You will not be able to defrag the partition/disk where your exchange data store resides because the files are open and locked by exchange (this is true of every application with a database).
As for the system partition and your data partition it would be a good idea to defragment your drives. Here are some points;

- Make sure all users are off the system
- Make sure there are no background processes that are tying up the disk while you are performing your defrag
- As I have indicated above, shutdown any running applications that don't need to be opened during the defrag process
- You may want to tempoarily disable on-line virus scanning since it will interfere

Bare in mind that if you let the trial software expire you will receive error messages. Hope this helps.

I looked around for the folder exclusions and went into program files and clicked on exchange. Will that be the only file I should exclude.

if you're excluding \program files\exchsrvr, you should be fine, ASSUMING that TLs and/or databases haven't been moved elsewhere.
