Is there a way of stopping people saving ISO files to a network share ?

As of I know, there is no native support for this in Windows OS. What I would suggest is probably write a VB Script to search for and delete the ISO files. Schedule the script to run at regular interval.

You might be able to get around it with the advice above, but I doubt you will be able to get around the fact that someone might save the file with an allowed extension to get around your new security measures.

I use file server resource manager R2, before that I used a script to run through every users folder for .mp3s .avi etc and copy them to my computer (maybe something I like) then delete them.

With R2 there's an add on called File Server Resource manager that has a File Screening module. You can use this to block files of any type.
