Disabling keyboard and mouse to prevent mishap

Hi, the company im working for has a messy, to say the least Babinet racks with servers, switches routers, ect...
What I'm looking to do should be fairly simple but for the life of me cant seem to get it.

The servers and PC's in the cabinet all have mice and Keyboards attached to them. when I go in to patch something or simply modify hardware, whatever, i gotta be careful not to click any keys or mice from the other servers running windows pased OS's. Mostly Win2k ServerSP3. I once by accident must have hit 'esc' and the pc anywhere connection waiting connection closed itselfd and i had to go back to the remote site hours later to start the host again.

Basically, how would I disable the mice and keyboards from these windows based machines and have them re-activated without rebooting or anything drastic like that.

Use a KVM switch. You'll also save some space.
