Digital Dining demo developer install

I'm working on a 3rd party application that will run alongside Digital Dining and use its print queue. I'd like to be able to test it out on a demo or development system. The dealer has been uncooperative, so I'm faced with trying to develop and test live onsite, which is not ideal.

* Is it possible to run DD in a demo mode?

* Should the restaurant have the original installation media?
