If the customer uses the dhcp helper in their dhcp server do I turn off dhcp in the 3300 and not use option 125?

thanks

It depends on the setup
If you are using VLANS and do not have CDP (LLDP) enabled then you will need to keep the dhcp server on the 3300 turned on.
If you have a flat network with no VLAN or have CDP enabled network then you should turn it off.

We have a voice and data vlans setup in the switches. We are also using CDP. So we can leave dhcp off in the 3300 and let the windows server hand out IP's to the phones....correct?

Yes that is correct
