DHCP Log retention

Does anyone know of a method to allow me to preserve my dhcp logs for posterity. Exchange 2000 keeps these logs identified by the 7 days of the week Sunday-Staurday and overwrites them. I would like to send them over to my logging server if possible. Thanx in advance.
