Is there way to determine the date and time that a particular email was deleted? By "deleted" I mean moved to the Deleted Items folder and/or outright deleted (shift+delete).

We're using Outlook 2003 w/ Exchange 2003.

If the item is in the deleted items folder you can open it and click on file ->properties. Assuming that no changes were made to the message after the item was in the deleted items folder then the "modified" date and time is the date/time of the deletion.

As for an outright deleted (shift+delete) message you won't be able to find when it was bypassed both your deleted items folder and item retention (if using Outlook/Exchange AND item retention).

Cheers.
