Just a basic question - up to now I've been designing websites using Fireworks - what would be the benefit (if any) to me in switching to Photoshop?

None at all. Photoshop is a Photo/Image Editor. Fireworks is a graphics editor.
Switching to a HTML editor is what is really needed for webdesign work.

I use Dreamweaver for the actual pages but FW for the graphics etc. So there's no real difference in the quality of results between FW and Photoshop?
 
Ah! misconstrued the question there slightly.

Horses for courses, FW is better for web graphics in that case. Having said that I don't use FW at all I prefer to use Illustrator for graphics.
