Desiding on Collation

Hello,
We are going to be installing a new instance of 2008. Currently in our 2000 instance we are using collations of both Latin1_General_CI_AS and SQL_Latin1_General_CP1_CI_AS. This causes problems that I want to avoid in the future.

I read where the SQL is more for backward compatibility and that the Latin1_General_CI_AS is the Window standard. Is this true.

That being said, which should I use as the default? Why?
