If you delete a User profile under W2k, will it also delete the documents you created under that name? i.e. word 2000 documents and excel documents?

and how do i restore it back (the user profile)

It should not delete documents and other things that were created by the user.

However, you can't just "create it back". Each user has an associated SID which is a one-time-only feature. Deleting and then re-creating a user doesn't give them back their prior SID, it assigns a new one. This means profiles and other things that are associated with that user will not be accessible to that user even though the username hasn't changed.

If you delete the PROFILE, then YES, it will delete everything that user had created provided it was stored in the Documents and Settings hierarchy. Documents and what-not stored outside that should be unaffected.

To restore a profile you'd need to have it backed up somewhere. Restoring depends on how you backed it up, and can range from running your backup software to manually creating the user profile, then copying the backup over the top of the skeleton profile for that user and resetting permissions/changing ownership to that user.
