Deleting or Changing a Quota

Has anyone ever created a quota and then assigned to the site (application) and then later changed or deleted the quota and notice that in the Storage Space Allocation it continues to display the old quota limit?

The reason was our storage requirements are increasing and I do not want to put a limit on the size.

Running MOSS 2007, 1 SQL Srv 2005, 1 Project Server and 1 Sharepoint application/web server - all the latest security and service pack updates.
