I deleted an outlook profile as there were issues opening outlook. When I created a new profile outlook opened. The inbox etc was there but all but 1 of the folders were missing. I don't know if the folders were pst files as it is not my computer but can I get them back? The exchange mail will be backed up but not anything saved to the C drive - does deleting the profile from the Profiles window actually delete a pst file or could it be I just need to add it to outlook again

You just need to add it to outlook again... The Exchange stuff is probably in an OFT file for Exchange Cached mode.

Other personal folders have the PST extension. You may have not used cached mode and used a pst file... If that is the case you need to make sure you specify the right peronal folder for delivery. And in this case I'm not sure the data would stay on the server.

If its PST files then File-Open-Outlook Data File, should point to docs and settings-username-application data-microsoft-outlook. This is normal place for PST file storage.
Or it could be shared mailboxes, then you goto Tools-Account Settings-Change-More Options, click on Advanced tab and add mailboxes back in here.
