'Default' v 'Default User'

In trying to create a default profile for our domain I notice in Windows 7 there's a 'C:\Users\default' folder and a 'C:\Users\Default User' folder.

What's the difference? Which one should I be using for testing the default user locally (prior to copying up to the Netlogon share)?

And, when I try to apply Full Control permissions to Everyone as Administrator, why am I getting 'Access Denied' on some of the profile sub-folders?!
