I worked at a place once where there were default templates available when the user selected File on the toolbar. There were default templates like Company letterhead, Fax coversheet, memo, etc.
Pretty easy to do. Create a document with all the items you want to have in your fax or letter (such as auto insert current date, company logo, etc.) Save the document as a template. Place a copy of that template you just created into the location indicated in Tools\Options\File Locations\User Templates (mine is set to c:\program files\microsoft office\templates. You can create a new directory if you wish or you can use the ones already there. Close Word and reopen. Go to File, New and that new template should show up in the appropriate tab (the tab names are the names of the directories under your template directory).
To make it easy for you, you can run one of the standard letter or fax templates that Microsoft offers and change it to suit your needs then simply do the file, save as, type = template and name accordingly.
