Default sender, how do I set it?

I've been with pc's for decades, but I have not had to deal with this issue in a long time. When I send a mail message, I have to choose who it's from. I know it's an easy fix, but I've forgotten it. Chalk it up to Old Timers Disease. How does my default e-mail address show up in a new message when I create it. Thanks.
