Default roaming user profile

I had created a user profile in xp pro workstation and setup desktop preferences. Then run regedt32 HKEY_CURRENT_USER and on security added domain users permissions full control. Also in advanced button reset the permission on all child objects…. Then copied the profile to server as default roaming profile. I did not assign home directory. Server is window 2000.
Well it worked out fine when users logged in they got the new profile. Except a big problem with outlook. Users lost the outlook profile. When outlook started a massage said the outlook.pst has changed location. I tried to copy the old one back to new location (c:\doucmentand setting\user\Application data\Microsoft\outlook) but it only worked as long as user section was current after they logged out they would lose it again. Also they email account disappeared. Another strange thing is on some users the profile point to outlook.pst of another user!
Well as you have guess by now I’m totally confuse.
(no exchange server)
Any idea where I went wrong?
