Is there anyway to find the default printer of all users rather than just individual users?

In /etc/printers.conf there should be a default setting. You can specify a different one in $HOME/.printers though.

Each user can have their own default printer. I want a list either of each user and their default printer, or each printer and who has it set as their default.

Oh ok I misunderstood what you were asking. I guess you would have to write a little script to go through the home directories and look at the default printers.
