If I transfer some files to a hard drive from an Iomega zip disk would the files now on the hard drive contain any remnants of information that the files originally wrote over the top of that may have been on the Zip drive. My concern is that you hear recovery is possible of data deleted, reformatted or corrupt from a drive but does old information underneath, transfer over to another drive, when files are moved to that new drive.

No, once an area of data is overwritten with new data, the old data in that physical location is no longer accessible. FYI, have a look at the article in this thread.
