Data mining Outlook

Here's one for you guys and gals:

I need to get from Outlook a list of people I have had conversations with and how many conversations (or emails) have gone back and forth. All my emails are filed in various folders, probably 100 or so. How can I get a list of all emails sorted by sender or conversation and then massage that list so I can find out who I have spoken to the most?

Which version of outlook and where is the data stored?

I use Outlook 2003, the data is in my pst file on my local drive.
