My preference is always Procomm, the once DataStorm product bought by Symantec. It has an extremely powerful scripting language, and it does data capture in several different modes that will allow you to capture data in its raw mode (with escapes and all) if necessary.
I understand that many people out there use TeraTerm as well, but it is limited in terminal emulations. Its macro language is also very powerful. And it is free!
