I am needing to change the way we process customer service requests for replacements, defects, etc. However, I cannot find were this is supposed to be. I saw a tab on the Invoice Data Entry that says Customer Service but there is nothing there but our Company name.

Also, is there a was to add a tracking # after the fact.
 
In MAS by default there is no feature that handles customer service. You would need to purchase either the RMA module or Service and Warranty from
As for adding a tracking number after the fact. The ability to import the tracking number into the history table was at one time broken. Not sure if it was ever fixed.
