I am trying to generate two fields in a query that are equal to the current date -3 and the current date +3. These fields will then be used to compare a date field on a report for conditional formatting. If record.date Beteween First_Date and Last_Date.....

Have you tried
record.date between now() - 3 and now() + 3
as your conditional formatting expression?
