Cross Tabulation in MS Excel

Be happy to explain. I have survey results, I used a Pivot table to do a Cross Tabulation. I put one field on the left, one up top and very confused as to what to put in the middle. Then when I compare there totals to my totals, I am off by one or 2. Appears that if a question wasn't answered it freaks out.
