As root, just type passwd username <enter><enter><enter>
or you could take the plunge and edit the passwd or shadow file in the /etc directory and remove the encrypted string from between the colons. Since most people are now using shadow files over the regular passwd file to store the passwords, I'll only give an example line for /etc/shadow
