We have a number of items that we would like to put up for sale so our employees can purchase them. Included in this is about 30 chairs. Since it is unlikely that one person will want all 30, I would like to find a way to put up a listing that would allow people to select how many chairs they would like to purchase, and that would take that number from the total so when all have been claimed no one else can try to reserve them. Is this possible to do in SharePoint?

you may be able to do something using an InfoPath form. Just allow people to add how many they would like, have them save the form and then deduct that number from the total.
You can also append that data to the bottom of the InfoPath form so that you can keep a running tally of who requests the chairs and how many they request.
