Creating an Interactive PDF

My boss has asked me to create designs for the inside pages of a menu for her restaurant. Not only does it need to have artwork and text, but she wants to be able to edit the text on her computer (in case dishes, ingredients, or prices change). I've read that I can create an interactive PDF, a file that will open on someone's Acrobat Reader, and they will be able to select and edit the text. Is this even possible? If so, how can i create such a file on Adobe Acrobat 7 and will I be able to import Adobe Illustrator artwork into the Acrobat interface and create an interactive PDF that way?

Any information anyone has on this is greatly appreciated

(btw, I have no idea what 'MIS' means. I don't think I'm any of the other choices either. Just an individual here doing some freelance graphic design)
