Create/Delete Field with Script?

Is it possible to create a field with a script, allow a user to select from the field (a predefined list), and then delete the field? I'm just getting started with scripts.
Thanks.

Never let a user create a field.
A record - yes
Fields - no

Or am I missing something here ?
