To create an online store catalog in PageMill, starting with 100 items but growing to perhaps 250 items, do I create a table? Say, thumbnail of item in left cell, then description in the next cell, then price in a cell, then in the last cell a "buy now" link? Is there a better way?

Tables seem like the best way to manage this. It is the only way you are going to retain control of the layout. I think you will find it much easier to revise and add new items/lines to the page. You also have the option of using the cell colour to highlight columns and rows and add interest to the page as well as helping the visitor read across the lines.
