I think you would be better off creating your poll on a website and then providing a link to it in an email message. You will have much more control and many more options available to you by setting up a webpage.
Some people (like me) view their email as text-only since it's much safer and less annoying than viewing messages as HTML. It's easy to switch to HTML (in Outlook 2003, at least) but some companies may disable HTML viewing and your user would be unable to respond to the poll if they don't know how to operate their mail client.
You also have to account for the various email clients that your customers might use. Some may not display or run your content correctly.
You can use voting buttons in Outlook, but there may be issues with that working outside your Exchange org. And, you can only typically ask one question.
