Are there either "Crash log files" or Tombstone file in Redhat ver. 9.0 that would tell me why I was unable to ping or ssh into the system forcing me to reboot? Does everything go into the /var/log/messages file ? If so, How can I take certain messages, when they happen, and have them redirected to another file??

/var/log/messages is your best bet. Next time it happens, try restarting your networking before resorting to a reboot. About the only time I have to reboot my servers is to install a new kernel.
