CP 5.0 Voice Mailbox set up with language prompt!

I have checked the posts and could not find relevent to my question.

We have Opt 51c and CP 5.0 upgraded from CP150.. we have analogue trunks..
Here is my scenario.. I have one toll free number terminated to DID which further split into language prompt and off we go with two voice mail boxes in English and French.

As for volume of calls I am expecting about 90 to 100 calls a day.. where we advise our clients to leave detailed message and will call them back in 72 hours.. We have two full time employee to check messages regularily..

My question is how much maximum mailstorage quota I can allocate to these two mailboxes.. and do you think its good practice to build application in CP with DOW and TOD so that we don't get our mailboxes full during weekend.. or any best practices you can recommend is highly appreciated.
