This is probably a stupid question, but I'll give it a try.
Does a device exist that will interface a computer and a copier/fax machine and make it so that it could be used as a printer through the telephone jack?

As far as there being a "device" to convert a copier/fax to a printer, the answer is no. Not only would that be difficult to do, but with standalone laser printers being as cheap as they are today, the idea is pointless.

However, many newer copy machines have an ethernet port on them that can be activated to allow you to add it to the network as a printer and scanner. If you are renting the copier, this feature has probably been locked and would require an additional fee to be paid to the vendor for access. But the point is that if it's newer, there's a chance it already has the feature you're looking for.
