Converting voice to text

My company has recently purchased a T1 for voice. One of the requirements of our new phone system is to record conversations and convert them to text. The company installing and providing our phone system said that we need an Exhange server in order to do this. I am yet to speak to their IT Tech to figure out the exact process. Any ideas on why this would require Exchange, and an idea of how this process is supposed to work would be greatly appreciated.

I don't know how it would work but if they are going to be say emailing the text transcipts or even the actual audio your looking at some big databases after a while. I must admit though that turning voice into text automagically is pretty sweet.
