Converting Data in Crosstab format

The required output suggests a manual cross-tab in which you would have to build formulas for each data element, inclusive of the dates.

An example of the dates might be currentdate-4 to get last Thursdays date.

Then to accumulate those you can use a Running Total or a manual formula to accumulate the quantities using a similar filtering:

Running Total:

Select the field to sum
In the Evaluate Use a Formula place something like:

{table.date}=currentdate-4
and
hour({table.date}) in 0 to 8

Keep in mind that hour works on 24 hour time for the formulas after noon.

You'll have to create formulas for each data point of interest.
