Converting CMYK to Spot colors in InDesign

I've had several questions from printers recently regarding converting CMYK to Spot color in InDesign -- any helpful advice?

CMYK is a mode. Process and Spot can be made with other modes as well.

I assume you mean changing a process color to spot. Just double click the appropriate swatch and select Spot intsead of Process, The reverse is also done that way.
