Converted text still retains font info ! ? ! ?

In InDesign: I have noticed on files where the fonts have been converted that it still retains some font information. Even shows it as bitmapped when the wrong font isnt activated. How can this be? I was working on a customers graphic and the CONVERTED FONT within was bitmapped! I tried everything I knew of to fix it and until I activated another of the fonts family did it appear correctly. I have noticed this in other files as well. When the file gives me issues because of the fonts, I convert then! They later come back and want the text revised. and I have noticed that I can sometimes highlight it and actually change the already converted text. This is so different than AI's converted text.
Can anyone answer this?
 
I don't understand what you mean by "converted". Do you mean create outlines?

Converted text - changed to outlines - should not be editable as text after converting. I don't know what program you were using to come back and edit the text after conversion. The basic principle is that once converted, it stays that way, unless you are in the same program and have not gotten out of the job in which you just converted the text and you can then undo the convert to outlines action.

Are you saying that you can edit the text in an AI file after you have converted the text and then closed the file and then re-opend the file some time - hours-days - later?

No. I cannot edit the text in AI ( I was just comparing how the two programs convert text).
What I am saying is that In InDesign CS2 4.0.4 (Mac OSX 10.3.9 -G4) I have a document from a client that has the font 'Futura Bld.' in it and it has been converted to outlines/curves. However, it appears bitmapped unless the font is activated in my Extensis Suitcase font managing software. This line of text is actually no longer text, I can use my hollow arrow and actually pick points on the now converted text. So I am not sure how it is retaining font information within it. When I turn off the font it is then bitmapped again.
When I go to 'Find Font' it displays the warning shield within this menu and I can choose to select it and replace font. (The information on it is an embedded piece of graphic art) and will not allow this font to be replaced.
This is the most unusual thing I have come across and I have used InDesign from its conception.
 
I can only guess that there is still a character in that font that didn't get converted to outlines, such as a paragraph mark or even an unused text frame. Perhaps there is a graphic containing that font that didn't get converted to outlines?
